Shrimp & Snow Peas

6 oz - Shrimp
1/3 cup - Jasmine Rice (uncooked)
1 cup - Snow Peas (chopped)
1/2 - Red Bell Pepper (about 1/4 cup)
2 tsp - Extra Virgin Olive oil
1/4 cup - Shredded carrots (optional)
Tamari Soy Sauce and Roasted Sesame Seeds (optional)
Cook rice according to package instructions.
Meanwhile, sauce snow peas and red bell pepper (carrots if added) in olive oil over medium heat in a skillet until vegetables just begin to soften. Add shrimp and cook until pink and curled. Season with salt and pepper.
Combine all ingredients together, top with the Tamari Soy Sauce and Roasted Sesame Seeds (if you choose) and Enjoy!
