Chicken with Rice, Mushrooms & Spinach

  • 2 - 6 oz. Chicken Breast (sliced)

  • 8 oz. Mushrooms

  • 4 cups Fresh Spinach

  • 4 tsp. - Extra Virgin Olive Oil

  • 1/2 Large yellow onion (sliced)

  • 1/2 cup cooked Jasmine Rice (cook before preparing dish)

  • Jerk Seasoning, Smoke Paprika, & Sea Salt ( Season chicken to taste)

Season and Slice Chicken. Heat oil in skillet add chicken pieces

and brown for about 3 minutes per side add onions, cook for an additional 3-5 minutes per side then add mushrooms cook this for five minutes on medium fire then cover and cook an additional 12- 15 minutes on medium low fire until chicken reaches 165 degrees. Remove top, take chicken out and set aside. Add the spinach to the pot and cook with the mushroom and onion mixture until wilted. Remove serve with 1/2 cup cook Jasmine Rice.
