Catfish Sauce Piquante'

  • one small light roux - see video - (Flour and vegetable oil)

  • 4 catfish filets cut into halves making 8 pieces

  • 2 cups Guidry's onions mix

  • 1 stick butter

  • 1 - (10 ounce) can Ro-Tel

  • 1 - Hunts Fire Roasted Diced Tomatoes - (14.5 ounce can)

  • 3 ounces Contadina Tomato Paste

  • 1 - (15 ounce) Contadina Tomato Sauce - Extra Thick and Zesty

  • 7 ounces of Delmonte Stewed Tomatoes - Original Recipe

  • 3 large Bay leaves

  • 1 tsp File'

  • Minced Garlic

  • 3 Tbls Sugar

  • Liquid Smoke & Worcestershire sauce

  • 1 tsp Lobster Better than Bouillon

  • Tabasco, Cayenne Pepper, Smoked Paprika, Salt, Black Pepper, Old Bay Seasoning and Lemon Juice

After cutting fish, place in bowl and season with Salt, Cayenne Pepper, Tabasco and Lemon Juice cover and set aside in refrigerator. Cook a small light Roux. To the Roux add onions mix and saute' for about 5 minutes add Butter and Tomato Paste cook on medium fire about 5 minutes stirring so it doesn't stick. Add all other ingredients (except fish) and cook stirring occasionally on Medium Heat for about 45 minutes. Add Seasoning to taste (as some may like it more spicier than others) but I add roughly 8-10 shakes of Tabasco, maybe 1/2 tsp Cayenne Pepper, 1 tsp Paprika, 1/2 tsp Black Pepper and about 1/2 tsp Old Bay seasoning and Right then I taste after the 45 minutes of cooking to see if I need extra. (you will want a sweet heat that will hit the back of your throat but as to not over power the flavor of the fish.

Finally add Fish and cook for about 15 -20 mins (DO NOT STIR ONCE FISH IS IN) swirl the pot in circles to move fish around or it will break apart.

Note: if you desire a thicker sauce add more tomato paste or more Tomato sauce if you desire a thinner sauce.

Serve of White orJasmine Rice and enjoy! Top with green onions (optional)
